This is a summer staple in my house. It may seem like a slightly unusual combination but there’s something about the way the sweet watermelon and the salty feta taste together that just works.
Toss together the watermelon, feta and cucumber in your favourite serving bowl.
Crumble over the feta and tear over the mint. Squeeze over the lime and salt – serve immediately
250 grams watermelon peeled and chopped into small cubes (this is around half a small watermelon)
100 grams organic feta cheese
½ cucumber peeled, deseeded and cut into the same size cubes as the water melon.
Small bunch of mint leaves stripped from the stalks
Juice of half a lime and a sprinkling of flaky salt

This makes a wonderful alcohol free alternative to an Aperol spritz. It’s delicious on a hot summer day so if you have guests be sure to make enough to go around!
