Gluten Free Oat Waffles

Breakfast needs never to be boring again! Packed with healthy ingredients this recipe is much healthier than most other recipes out there!

Method

In one bowl, whisk the wet ingredients together. In another mix the dry ingredients. Add them together and mix briefly.There should be a few small lumps-This is fine. Do not over-mix or your waffles will be heavy.

Leave to stand for 10 minutes while you pre-heat your waffle maker.

Spoon the batter into your pre-heated waffle maker and cook for around 5 minutes or until golden and crisp. Serve hot with your favourite topping.

You can easily make your own oat flour by blending gluten free oats in a high powered blender until you have a fine flour.

160g GF oat flour


70g melted butter or coconut oil


170g plant based milk of your choice (I used oat milk)


2 large eggs


2 teaspoons of baking powder


Pinch of salt


1 teaspoon cinnammon


2 tablespoons maple syrup


1 teaspoon of vanilla extract


Serves: Makes around 6 waffles
