Chocolate Chia Parfait 3 Ways

This parfait is packed full of fibre, protein and omega 3, along with mood boosting properties.

Method

Soak the chia seeds making sure to add the seeds and cacao first into a container and then add the almond milk or nut milk of choice, whilst continuously whisking with a folk to avoid clumping.

Once they start to thicken, add the remaining ingredients, stir to combine.

Cover and refrigerate for an hour or overnight.

For a breakfast option top with sliced banana, coconut yoghurt, berries and some granola for a crunchy texture.

If you need an on-the-go snack, layer in a jar with some spiced berry chia jam (see recipe here) with some berries and spoon full of nut butter, pop the lid on and off you go!

Perfect to make the night before for those busy mornings. You can also top with some cherry compote (see recipe here) for a healthy decadent dessert. I’ve impressed many a dinner guest with this one, even my kids love it!
