Is there anything more comforting than a delicious bowl of pasta? This has become a staple in my house.
Bring a large pot of water to the boil and season with plenty of sea salt.
Cook the pasta according to the instructions on the packet - all brands vary but always cook ‘al dente’.
Five minutes before the end of the cooking time spoon the pesto into a large mixing bowl and whisk in a ladle of the cooking water.
Drain the pasta and add to the bowl mixing well so that all the strands of pasta are coated in pesto.
Tip into a warmed serving bowl and scatter over the basil.
Enjoy!

This makes a wonderful alcohol free alternative to an Aperol spritz. It’s delicious on a hot summer day so if you have guests be sure to make enough to go around!

This is such a versatile way of jazzing up vegetables on the BBQ. I used aubergines and king oyster mushrooms, but you could also use sweet potatoes, squash or red onions.
