Mashed or sliced avocados are easy and delicious for breakfast or for a snack. Here are three favourite ways to top your Avocado on toast.
Smash the avocado with the lemon juice and season with salt and pepper, and lightly toast your preferred bread.
For Beet Hummus & Poached Egg:
3 tbsp Beet & Mint Hummus
1 or 2 Eggs - poached
Spread the hummus over the toast and top with the smashed avocado. Top with the poached egg/s and some broccoli sprouts, season.
For Pesto & Smoked Salmon:
2 slices Smoked Salmon
3-4 Caper Berries
Spread the pesto over the toast and top with the smashed avocado. Top with the smoked salmon and caper berries.
For Fig & Walnut:
1-2 Figs - cut into slices
Hazelnuts - toasted and roughly chopped Pomegranate Molasses
Drizzle your toast with some extra virgin olive oil and top with the avocado, fig slices and hazelnuts. Then another drizzle of pomegranate molasses.
1 or 2 slices of Sourdough or GF Bread
1 Avocado - ripe
1/2 Lemon - juice
