Apricot & Ginger Bliss Balls

Add 1 tbsp of Marine Collagen to optimise your 'beauty bliss balls'. The collagen will aid skin rejuvenation.

Method

The softer the date the better, but if your dates are dry or tough soak them in warm water for 20 minutes, drain and squeeze as much liquid out as possible.

Place all the ingredients in a food processor and blitz until the mix comes together - you may need to stop the machine a few times to scrape down the side and move the mix around with a spatular.

Tip the mix out into a large bowl and roll mix into golf ball size or smaller - to your preference and roll in the extra desiccated coconut.

Store in an airtight container in the fridge for up to 2 weeks, but trust me - they never last that long!

I usually make a double batch and get the kids to help, and they can be frozen too for months and a secret stash.

60g Desiccated Coconut (about 3 tbsp extra for rolling)


40g Sunflower Seeds


100g Almonds


60g Cashews


110g Medjool Dates, stones removed


70g Dried Apricots


1 tbsp Ginger Root, grated OR 1 tsp Ground Ginger


1 tsp Turmeric, ground


Pinch Ground Pepper


Serves: Makes around 15
