Cherry Compote

This is a really versatile fruit compote! I enjoy a spoonful mixed with my oats or yoghurt or even on top of sourdough. Will keep in an airtight container in the fridge for one week.

Method

Place all the ingredients into a medium saucepan and bring to a rolling boil for a few minutes and then simmer until it reduces.

Squash a few of the cherries as they soften, leaving some whole. Leave to cool completely before storing in a clean jar and in the fridge up to a week.

Ingredients

3 cups / 400g Cherries - Frozen

60ml Water

2 tbsp Lemon Juice

1/2 tsp Allspice Powder

3 tbsp Dark Agave Syrup

Serves: Makes 8-10 servings
