Vegan Blueberry & Banana Granola Muffins

These muffins are completely plant based but you'd never know! Mashed bananas replace the egg and give the muffins a lovely moist texture.

Method

Preheat the oven to 180c.

Line a 12 hole muffin tin with paper cases.

Roughly mash the bananas with a fork and whisk in the sugar.

Add the melted butter and quickly whisk to combine. Do not overmix. A few lumps is fine.

Divide between the muffin cases and top each one with granola then bake for 20 - 25 minutes for small muffins or up to 30 minutes for large muffins.

They are done when a toothpick inserted comes out clear.

Transfer to a cooling rack and allow to cool completely.

3 very ripe bananas


115 g light brown sugar


60g melted vegan butter


180g self raising flour (gluten free self-raising flour works well too)


1/2 teaspoon Gluten free baking powder


125 g blueberries


100g granola


Serves: Makes 12 small or 8 large
