No Bake Granola Bars

My granola bars are quick and easy to make and packed full of heart healthy ingredients like flax, chia and nuts.

Method

Place all the ingredients (except the topping) into the food processor and pulse chop until just combined.

This will happen very quickly so watch it carefully, stopping the motor ever few seconds and checking the mixture.

You want the mixture to have plenty of chunks but to stick together when squeezed between your fingers.

Line a 20cm square cake tin with baking parchment and press the mixture firmly into it. Use the back of an oiled spoon to get the mixture into the corners, cover tightly with clingfilm and place in the fridge until firm, about 1 hour.

Meanwhile, melt the chocolate and coconut oil in a bowl set over a pan of simmering water. Allow to cool slightly and remove the granola bar from the fridge.



Carefully pour the chocolate over and evenly scatter the coconut flakes over the top. Chill until the chocolate is set (another 30 minutes) before cutting into 12 bars.

Ingredients

200 g gluten free oats


130g flaked almonds


130g pecans


4 tablespoons milled chia seeds


4 teaspoons milled flax seeds


250g unsweetened crunchy peanut butter


125g maple syrup


150g Medjool dates (softened in hot water if they are not very soft)


Topping -


150g 72% dark chocolate


1 tablespoon coconut oil


30 grams of toasted coconut flakes


Serves: Makes 12 bars
