My belief is that easy to prepare nourishing recipes are paramount for maintaining both mental and physical wellbeing. As a child, the heart of our home was the kitchen. My Mum always cooked everything from scratch, and she inspired me from a young age to learn about cooking and experimenting with ingredients, flavour, spice & variety.
Over the years, I have learnt more about how to use food to nurture and fuel your body to energise and enrich your life. Here are some of my favourite recipes for you to try at home.

This is my ‘go to’ granola recipe and it really lends itself to being played around with. You can vary the nuts and fruits to suit your personal taste or even according to what you have in your store cupboard.

The bananas provide a nice dose of potassium, so this treat is perfect for post-workout.
ReadThis is such a versatile way of jazzing up vegetables on the BBQ. I used aubergines and king oyster mushrooms, but you could also use sweet potatoes, squash or red onions.

This is a light summery pasta dish that can be served either hot or cold making it the perfect side dish for a summer BBQ. It also ticks all the boxes being vegan and gluten free and is easy to double up for a larger number of people

For me, this is the taste of summer! Lots of crunchy, healthy vegetables in a tangy dressing and some added crunch from the peanuts. It’s the perfect accompaniment to a casual lunch buffet, BBQ or Sunday lunch.

This is a real crowd pleaser and the recipe can easily be doubled if you are feeding a larger crowd. It goes particularly well as a side dish at a BBQ.

This dish is all about the amazing salsa. I’ve paired it here with salmon, which is rich in Omega 3 and goes really well with all the zingy flavours, but it works just as well with grilled halloumi or even grilled vegetable skewers for a vegan option.

For me, asparagus is the pure taste of spring. It has a short season and is utterly delicious when eaten fresh and simply cooked.

These sweet little treats are creamy, lemony and just a little bit sweet yet are completely plant based. They are delicious with a cup of tea or, if you cut the whole cake into 12 instead of 16, they make a wonderfully light dessert served with a scoop of plant based crème fraiche and a handful of raspberries.
